I like canon Darcy, but I do understand why some people don't. It's easy for me to understand how you could grow tired of her, because she has a pretty large fanbase and had a fair share of screentime in Thor 2 (which I know some people had issues with). A little bit of Darcy is heaven, but I can see why too much of her would be hell.

She definitely isn't completely unlikable though (at least by my standards), so I get ya OP. She has a certain charm and can be delightful, I just hope they don't do too much with her in the future because I don't want to see more backlash.

Don't know much about her fanon persona though, because I refuse to read fic centered around her. Again, I like her, but not that much.

(Oh, and I know next to nothing about Kat Dennings outside of the fact that she's incredibly attractive, so...can't comment on that either.)
