Unless you're not in the Western Hemisphere (which of course you might not be, But in which case sorry but fuck you I still have to wait), Pesach ends tomorrow night. Believe me I could murder for a piece of cake right now, but I'm holding on.

Passover is 8 days long, from sunset to sunset. That's pretty much a hard and fast rule. How the hell are you reasoning around it?

I will fully admit that I am not Jewish.

However, I found this discussion interesting, so I went searching and found this explanation for why Reform Judaism only observes seven days:

Ah, I did my googling. Apparently the extra day isn't celebrated in Israel, but for reasons that as far I can tell involve time differences, an extra day was added on just to be sure you didn't end too early. With modern calendars this problem is eliminated. So I see what the reasoning is, although it leaves a bad taste in my mouth, personally. I'll be sticking to the tradition.
