I will forever be disappointed that Cap/Coulson didn't displace Clint/Coulson as a juggernaut ship

Did you really expect it to, though? Coulson fans kind of got attached to him in Thor and the C/C pairing came with, and a lot of Steve fans only like him in the context of Steve/Tony. Plus, there's the fanboy angle, which weirds some people out.

I guess I just can't see it being anything but a fringe pairing. I have been wrong before, though.
