The only Let's Player I regularly follow is Helloween4545. I've also noticed that anything on lparchive.org is likely to be good, though I'm not sure why. Beyond that, some highlights:

All the lparchive.org stuff is from SomethingAwful, which tends to have good LPs to start with because they actually care and will mock people who post shitty or low-effort or unfunny LPs, and the ones that get hosted there are selected based on quality and popularity. So that's probably why they're likely to be good.
