... wait, her dress wasn't pink? It's been pink in all of the merchandise I've seen for years.

It's both, courtesy a couple of fairy godmothers battling it out, but it's blue for the vast majority of the film. Disney used the pink version for the merchandise lineup because they'd already put Cinderella in blue.
