So are things commonly enforced in dress codes considered unprofessional in your workplace or does your employer just have good faith that its employers will wear things that represent the company well?

Though if you work in tech or something where people outside the company don't see you, I get not having a dress code.

My problem with the "it prepares you for the workplace" argument is not all workplaces require you to wear business casual or business professional. Sure, maybe it teaches you you don't have choices, but that's already fucking life anyway. The only people I see in my workplace are my co-workers. When I worked a job where I actually saw customers, I dressed nicer. We (and many others) were told that our school dress code was what we would be wearing in the workplace, which is completely false. I've never had to wear belt or tuck in my shirt in any job I've had, yet kids were suspended from school for these things.

That sounds like a pretty strict school, and I live in a country that has uniforms in all schools, including the state-run ones.
