I don't think anybody will notice, OP. if the show is simpleer than most and the fanon so elaborate, fans who're involved in the adult/teenager fandom won't notice? hell, people are already giving more head space to fanon than to canon, they're often two different kind of animals. maybe watch some episodes to truely soak in the kiddie spirit to not feel entitled to the show and appreciate what it does.
reminds me of this youtube video of an adult brony complaining about a my little pony colouring book. look into that abyss and don't become it 8-0

I think it's an extension of the fake geek issue that ticks off a lot of people. Despite the issue often being in a gendered context, both male and female fans can get really defensive when a non-fan comes into their space and tries to contribute without actually knowing the canon, especially if they actively dislike the canon, and are just looking for popularity and attention. It's seen as person being a liar, phony, or disingenuous, and they are just hanging on to the fandom as a sort of attention leech.
As for the OP: yeah sure, go ahead and give it a try if you really want to, the MLP wiki will give you the canon lore, and looking through some popular fics on someplace like FIMfiction.net will quickly introduce you to the popular fanons. Just for the love of god, don't go around telling people you don't like the canon, that's pretty much a guaranteed flamewar right there.
Lord knows I've met enough anime fangirls that don't actually watch Naruto, Bleach, or Gundam wing, but that didn't stop any of them from writing their 100k word magnum opus all about Sasuke and Naruto falling in love in an alternate universe where they are both high school students, and the author abviously never made it past the first 10 issues of the manga, so go ahead, OP, knock yourself out, can't be any worse than some of the fanfic that's already out there.
