A couple things:

First, I'm glad you're enjoying the fanfic side of MLP fandom! You hear so much negative about bronies, but over on FiMfiction I've rarely seen the kind of behavior that people complain about.

Second, I can't really recommend writing without knowing the canon-- at least enough to have the characters and their voices down. Somewhere else here you talked about finding their vocabulary similar, which is a major tip off that you're going to have trouble writing them. If there's one thing that will pull me out of a fic it's not having the voices down.

That being said, there are a few things you could try. I know that when my husband started watching, it took him about six episodes to really get into it (he lost a bet.) But by the time he'd watched the first six, he was hooked. I don't know how much you tried, but maybe give it a few more episodes? You could try putting it on in the background while you do something else.

Another thing you could try is that if there's one character or aspect you want to write about, someone familiar with the show could give you a limited list of episodes (maybe three or four) to make sure you've got that character down. That would probably give you enough characterization to make sure the center of your fic is solid, and you would hopefully pick up enough of the other characters to write them well enough.
