In one episode, two pegasi with bat wings are briefly seen pulling Princess Luna's chariot. Fandom extrapolated an entire race of bat-winged ponies, either carnivorous or vampiric, with a fondness for nighttime and a cultural link to Princess Luna. (There's an alternate interpretation that their appearance is the result of magic on their armor, which would also explain why royal guards look so similar.) I'm not in MLP fandom, but I tend to like stuff like that. I like when fans worldbuild, take details and flesh them out - to me, that's kind of what fandom is about.

Then again, I guess it would be annoying if this became as big as the canon stuff.

I don't think so. They just use it in fic. The OP did say we could mention fanons we like, though.

I know egophiliac did something with the batwing ponies with her Woona thing. But I never read it, so I have no idea what her explanations were. Though her drawings were always neat with them~

I like Ditzy Doo as a mail carrier. It's the only fanon that I want canon (is it canon? i can't remember) for the Grey Mare. And my favorite story for that is also on FIMfiction: Ditzy Doo's Dismally Derpy Day. Very good story. But if you don't like shipping, you might be a bit weirded out by the end. Nothing serious, like at all, but it's a bit shippy at the end.

Best fanon I've seen for Ditzy Doo: that cutie mark isn't bubbles. It's hailstones, representing her talent for unleashing death from above.
