Feminists have been trending #NotAllMen in response to men going, "Yeah not all men are actually rapists. So please do not hold us accountable for what criminals do." Feminists somehow do not understand that men are not actually the borg and thus not a connected entity. Thus #NotAllMen.

#NotAllFeminists is playing off of that. Because sure, not ALL feminists act that way but some do. So obviously, all feminists are accountable for what the assholes do.

You. Are. Missing. The. Point. We KNOW not all men do these things. But saying, "Huh, no, not all men!!1one", in a conversation about what some men are doing changes the focus of the conversation away from the problem. If you want a similar example, it'd be like a white person saying "not all white people are racist!" when talking about systematic racism. It's not about you. Stop making it about you. It's an un-needed strawman.

But usually it's in response to people saying stupid shit about how all men are rapists and murderers, which is not only really insulting but erases female rapists and murderers.

Nope, they are not missing the point.
As a female survivor, I've got to say that I am
a) super uncomfortable with the assumption that all men are basically mean rapist pigs until proven otherwise (that's not a healthy worldview to have at all. Be careful, sure. Listen to your gut feeling, sure. Live in fear of every male and of no female - hell no)
b) also not okay at all with the idea that members a large group of people being lumped together because of and judged for what single individuals who they share some characteristics with have no right whatsoever to be offended and react by saying stuff like "not all people belonging to group xyz..." when it is implied that they are the worst by default for belonging to demographic x.

You're a super kind of special, aren't you?

If you say something that implies that all members of X demographic behave in X fashion (especially if you're implying something especially horrible like rape, racism, etc), then don't be surprised if members of X demographic don't like that.

Not all men is a knee jerk reaction to ANYONE mentioning sexism. It's fucking pointless to have a discussion about rape statistics among women, for example, by first starting off with, "Now guys, we're going to talk about some men who raped women, but it's not you guys! You guys don't rape! Here's some stickers!"

How hard is this to understand exactly?

If someone is saying that we should end Father's Day because it promotes rape culture and the patriarchy then that implies that all men are sexists and rapists.

This conversation was never about rape statistics. It was about stupid people demonizing an entire demographic.

The guys who complain about women who cross the street at night if there is a man/men walking towards them. Getting offended because not all men are like that! So it's unfair that you do that to me! is one reason why Notallmen is asinine.

Getting upset because a woman took steps to protect herself/get away from a situation that made her uncomfortable isn't the same thing as getting upset because someone implied you are a rapist.

the point men (some men!!!111) are making when they complain about women crossing the street though is that they think her action implies that he is a rapist and take personal offense.

What diet_poison said.

Many men are wonderfully understanding of the fact women are just trying to defend themselves, but many are also woefully misunderstanding of this point. They see a woman crossing the street or not wanting to be alone with him as some kind of insult instead of a defensive measure against a very real threat.

In other words, some guys are acting like the latter of the latter situation because of the cause of the former one.

I could accept that whole argument if the MAJORITY of men were evil rapist scumbags. As it is, saying "all men are rapists" is like saying "all gay men are pedophiles" - just because there are gay people who molested kids, you wouldn't say "All gays are pedophiles" (which is still a popular opinion in certain circles that I'm pretty sure you don't want to belong to).
