And really, any character can be interpreted/written to be anything. We don't see into their heads. Yes, in canon he sleeps with women and appears to be heterosexual. But there are gay people in the closet who act that way towards women.

Honestly, Dean's enthusiastic embrace of all the macho cliches is a major reason I interpret him as queer; at some point, he stops looking like "the most heterosexual character in existence" and starts looking like a guy who's desperately overcompensating for something.
