Ooh, do you have any examples? The most I can think of right now is a couple episodes of Xena that kind of get into that territory, and the TV show within a TV show in Stargate:SG-1.

I haven't seen it, but I've heard Supernatural has an episode like this?

They didn't meet their actors though, they got swapped, or dumped in their bodies, I don't know for which because I couldn't bring myself to watch season 6.

Galaxy Quest isn't quite what you're talking about, but it's kind of similar.

Have you seen the Doctor Who Docudrama 'An Adventure in Space and Time' that details into the origins of the show? Without spoiling too badly, there is a touch of that towards the end of it.

There's also a story in an old Star Trek profic anthology that deals with that trope (I.E., Kirk, Spock, and McCoy end up on the Star Trek set while William Shatner, Nimoy and DeForest Kelly end up on the real Enterprise).
