For a little bit of context, I have been to New Mexico, many times, and grew up eating Mexican food because I have a lot of family there. Often made using traditional family recipes from the American side of the family. I live in Scotland, but I know good Mexican food when I see it.

I once went to a restaurant that said they were serving "haggis fajitas", and I was intrigued by this combination of mexican food and scottish food, and my friend said it was a good place. So I ordered it. What came out was a lump of haggis wrapped in BATTER. It looked more like something a cheap chippy would throw together for burns night than something that a restaurant would serve. I bit into it, and the haggis was dry and the 'tortilla' was just as blech as cheap fish batter. I don't even remember if it came with salad or any sort of sauce. The waitress came around, asked how the food was, and I explained that this was NOT a FAJITA for many reasons, particularly noting the batter thing... and her reply was an affronted "It's hand made."

Just because it's hand made doesn't mean you get to re-define what it is.

That sounds terrible. Like, I can't even fathom why they would serve that. And handmade tortillas should not look like that (we buy some from a tortillaria here in town).

I dunno... I really don't know.

I don't think we have those here (google is pointing out ones in the US, that is not a good sign).

Which is why I need to learn how to make them!

I have made blue corn tortillas before, but I need practice.
