I think, though it's just my speculation here, that Israel gets singled out so much because the deck is REALLY stacked in its favor in this case. When you look at the statistics of the conflict for example (from Wikipedia):

Israel:
63 soldiers, 2 civilians and 1 Thai worker killed; 400 soldiers[11] and 23 civilians wounded;[12] 1 soldier captured[11]

Hamas:
146 soldiers killed[13] and 1 soldier captured[14]

UN OCHA: 1,439 killed (926 civilians, 191 militants, 322 unknown)[17]

Gaza's losses are enormous and civilian/UN buildings are being targeted.

I think, to a lot of people, it's not that Israel doesn't have the right to defend itself. It's that its actions are seen as overkill.

That'd be my guess.
