Sora is the same than Vaan is the same than Lloyd is the same than Tidus is the same than Digimon!Taichi is the same than KKM!Yuuri is the same. They are dorky teenagers who really don't know what they're doing, they're not that book-smart and they're over enthusiastic about things.
The characters stereotypes? Don't work jsut for the girls. And, again. Most - if not all, but I don't know them all - of these girls? Have MANY, MANY other traits besides 'romantic interest'. Yes, the 'cute girl' or 'girl next door' is from where they started, NOT where they stayed.

Sure the protagonist is often a stereotype as well, but even if you lump him down to 'angsty' and 'genki' that is STILL more variation than the love interest gets. Also, while the protagonist almost always gets some kind of PAST, the love interest never does and typically comes off as flat because of it.
Because the protagonist is the protagonist, he gets the lion's share of the attention and character development, and even if he is a type then he will inevitably end up with more depth than the love interest, whose personality is largely defined in relation to his.
