Potatoes were new crop rosy potatoes, but just about any baby potato variety would work. Boiled skin on in salted water until tender, with eggs that were taken out ~3 minutes after the water reached a boil.

While that was happening, peppers and carrots were chopped and sautéed with a drop or two of canola oil and salt and pepper, then set aside to cool.

Other vegetables were chopped and set aside.

Once potatoes and eggs were completely cooled (very important), they were chopped and salted (~half teaspoon of salt).

I can't give exact amounts for the sauce but I'll do my best to approximate:

1 tablespoon greek yogurt
1/2 cup of mayo
1 green onion, chopped
1 clove garlic, minced
1 teaspoon sauce from a can of chipotle peppers (go easy, it can be spicy)
1/2 teaspoon Valentino pepper sauce (or more chipotle)
1 teaspoon ketchup (for color)
1/2 teaspoon mustard
1/2 teaspoon chopped fresh dill (1/4 teaspoon if dried)
1/4 teaspoon ground cumin
1/4 teaspoon Mexican chili powder (optional)
5-6 drops liquid smoke extract (optional but recommended)
dash Worcestershire
salt and pepper to taste

I was raised on curry and mexican food! No need for me to go easy on the spice!

lol well I like it spicy myself (hence all the chiles in there) but I feel like I have to constantly warn people considering where I live is pretty dang white.

I know that feeling. Living in Scotland, I find that what most people consider spicy is... pretty much nothing.
