When I first played OoT (when I was 8) I really thought Sheik was a guy. And with the amount of magic all Zelda games have I just figured that the whole reveal scene in the church was done with a switching spell or something, that made them trade places. So even though there's been a lot of people saying he's not a he but Zelda in disguise and thus a she I personally find it kind of hard to let go of my own personal headcanon. After all, it's been about 15 years of me believing him to a be a guy.
Anyway. I kinda figured Zelda and Impa would send a different Sheikah to look after Link? While Zelda was training for her own destiny such as learning how to rule a country, shoot a bow and getting to know everything there is to know about the Goddessess, the sages, the Triforce and her own family history and how they're all tied together.
Sure Link and his mission were important, but important enough to let Zelda run after him and risk the future of an entire world by possibly letting Ganon get his hands on her? No way.

This pretty much falls very inline with my own personal head canon that Sheik was his own person and another Sheikah. The only difference is I sort of think of Sheik and a disguised Zelda switching out to talk to Link throughout the game because Zelda just seems the very hands on type (but anytime its high risk its been Sheik who could wait around in the open for Link to find his way to a temple).
