One thing I like to do is find a suitable thing to substitute the meat for in things. Like burritos with diced potato instead of meat.
I have a hard time finding this recipe online, so I will just pass it on myself. It's a vegetarian version of Korean Bulgogi, and if you want the original replace one of the carrots with sliced beef, and add it last. This is approved by the Koreans that taught me the original recipe.
You need chopped garlic, spring onions, soysauce, rice vinegar, honey(or sugar, but it's easier to get right with honey), two grated carrots and two types of fruit (the original was 1 pear and 2 kiwis, but I find that you can substitute with peaches and apples if you want) either grated or mashed somehow. Mix everything in but the soysauce, vinegar and honey, and then add those three until you get a taste you like. Cover the bowl and leave it in the fridge a while (24 hours if you use beef, for marinading). When you are ready, fry it until it's a consistancy you like, and also cook rice. Serve by making a wrap with a flexible lettuce, and if you can also add Gochujang (korean spicy paste) to the wrap.
Also, look up "no more ramen" on tumblr. It has things like "Vegan Sloppy Joes", which are very nice.
