I'm partial to Drinking Alone, Except With Two (http://www.fimfiction.net/story/87884/drinking-alone-except-with-two) and On Pins and Needles (http://www.fimfiction.net/story/46013/on-pins-and-needles). Some folks also like Of Age (http://www.fimfiction.net/story/35830/of-age), although I think it jumps through a few too many hoops to "prove" that Spike is emotionally ready for a relationship with Rarity. How to Woo Your Lady in Nine Easy Steps (http://www.fimfiction.net/story/6810/how-to-woo-your-lady-in-nine-easy-steps) is pretty IC, too.
