fuck it, baby bok choy recipe:

-1-2 heads of baby bok choy (depending on if it's your dinner or a side)
-about like a tablespoon of oil? maybe 2 or 3, cover the bottom of your pan. Doesn't really matter what kind, but peanut's good if you're not allergic
-4 cloves of garlic, chopped. Add more if you like garlic, less if you don't
-a pan that you can cover that's big enough to put all the bok choy in
-1/2 cup of water

1. Chop up your garlic. Doesn't have to be super fine, but get it reasonably granular.
2. Cut the bottom (the dirty bit) off your head of bok choy, then split the larger leaves in half lengthwise so they won't still be raw when the smaller leaves are done. You want everything in reasonably similar sized pieces.
3. Heat up the oil in your pan (a wok is best if you have one but it really doesn't matter. Once it's smoking hot, chuck in the garlic, swirl it around for 5-10 seconds or it browns, then dump in the pile of bok choy.
4. Stir fry the bok choy until it looks slightly cooked around the edges (should turn color and get a little softer), then dump in the water and cover your pan. Let that steam for 3-5 minutes or until everything's wilted down into a dark green pile of deliciousness.
5. Take off heat, serve either by itself, over rice, or as a side dish. Hell if I know if this is healthy or not but it is damn tasty and at least it's got veggies? However, if you've got texture issues with cooked spinach this might not be for you, as it's probably similar (never actually had cooked spinach since raw spinach is so delicious.)

Also, if you don't like things cooked, don't eat them cooked? I don't see what the problem here is, I eat raw spinach salads all the time. Grab some light vinaigrette and walnuts and craisins, that's an awesome dinner.
