Roast your veggies. Slap them on a cookie sheet and drizzle some light (not virgin) olive oil on them, sprinkle with a little bit of salt and pepper.

Something like 325º-350º in the oven for 15-30 minutes, depending on thickness/cut or type of veggie. You'll just have to look up recipes to see what appeals to you. Eggplant is a good one, red peppers, even carrots. I've also done kale... that one requires lower temps and less baking time (no stems). You can also roast red potatoes, tomatoes, asparagus, yellow squash, zucchini, onions, and garlic.

Try baking sweet potatoes too.

For things like brussels sprouts, after prepping them you can try simmering the veggies in vegetable broth or chicken broth for ten minutes. Or you can simmer them for just a few minutes, drain them, and saute them with bits of bacon for another few minutes.

You can put shredded cabbage in soups... or even just eat it raw.

I pretty much steam or roast anything... unless I'm putting it in a soup, and even then, some of that gets roasted.
