yes, and that's why it's amazing. you get up into like the 85 range, it stops tasting like chocolate and gets these really nice floral or fruity notes. you can't just chow down on the whole bar, have to savor it, let it melt in your mouth a little.

I like my chocolate to taste like chocolate, though. :) Which is not to say that I don't appreciate dark chocolate, but I don't really like it when the notes get bitter.

I'm not a snob about it, but I totally agree with this. I love when it gets really bitter so that you have to sort of use the first bite to get used to it. And the aftertaste is just as good as the main taste when it gets to that high percentage.

Fruity notes? Sounds like a wine! To me it's just too... strong? I had a, was it 95% percent one?, and it wasn't my thing.
I'm not a chocolate lover in general and prefer white chocolate.

see, I can't get mad at people who like white chocolate because that's clearly a different thing. 95% is a bit strong though, the sweet spot for me is about 85-87.

And yeah, you can definitely talk about chocolates like wines--I've been to a chocolate tasting before, shit was awesome.

Why not just buy the bakers chocolate and eat those then? 100 percent pure, no milk, no sugar at all.

I prefer darker chocolate because I like it to be more bitter and less sweet. Milk chocolate is irritatingly sweet to me. Also the texture is better with dark chocolate, but that might just be from eating higher quality chocolate as well.

Mmm, I noticed darker chocolate is less buttery smooth than the milk variety and almost never melts. (like M&M! :D )

Yes, exactly. I hate that buttery smoothness. I just can't stand that texture in the mouth, really dislike it. It's the same reason I can't stand putting milk in coffee or tea. Something about the texture is just... bleh.

I do like drinking milk on its own though. IDK.

The texture is really distinctive on milk chocolate. I don't like a full fat cheese or milk because I gott used to a low fat. I know people who can eat a straight piece of butter, with no toast or anything. =/

btw, I like black tea and milk...

I'm glad you can enjoy the strength and bitterness that comes with the darker chocolates that causes me to have to wash the strength from my mouth.
