Coyotes in some areas are an invasive species wrecking the ecosystem; for bonus funsies, they can crossbreed with other canids (wolves, wild dogs), and become larger (wolf hybrids) or more aggressive (hybridized with wild dogs).

Think of it like this: coyotes are the equivalent of mammalian cockroaches in some environments; they spread disease and filth, and kill endangered species, since they are carnivorous predators.

TL;DR: some places pay for coyote pelts and they will not ever be over-hunted
