I work in retail, and though I'm sure my counter isn't as hectic as a supermarket checkout, if someone asks me to give them different change in the middle of me doing something I say "sure, just give me a second, I'll have to rework out your change" and then take the time I need to take to get it right. If I need to I grab a calculator. If they complain that it's taking too long, I say that since they asked me after the transaction went through the computer I've had to work the change out manually. And if they aren't happy with that, then they should have thought about that before they asked for different change.

Taking an extra 30 seconds to make sure you're giving them the right change isn't a sackable offense, it's doing your job. Don't sweat it.

(Though if you're in that position again, what I'd do is put all the cash back in the register, use a calculator to minus their purchases from $5 then give them that. Easy peasy.)
