Need Recipe Ideas!

(Anonymous) 2014-09-27 08:18 pm (UTC)(link)
(Deos anyone else pronounce recipe in their head as "rec-ipe" to make sure it's spelled correctly?)

I won an online giveaway for some food products. I know there are tons of recipes out there with the ingredients I have, but I want to know what was worked for you so I can try it out!

I have packets of goji berries, mulberries berries (that's how it labeled, twice the berry?), hemp seeds, chia seeds, cacao powder, and coconut sugar.

I feel I'm a pretty good baker/cook. I don't do it a lot but usually have some basics on hand. I will make quick breads and muffins. For savory meals my standby is a chicken thigh with paprika, some veggies and a sweet potato or bulgur. Do love chills as we get into the fall/winter, I usually make vegetarian. The only real 'allergy' I have is to avocado but that might be more of an oral allergy not a life threatening one. I am not a pasta person.

Thank you all!

wow, these are some rare foodstuffs here. I've read somewhere that you shouldn't eat too many goji berries at once. =/

This seems like a pretty good general primer on coconut sugar that doesn't appear to be written from an exclusively diabetic/GF/paleo POV. The suggestion in the comments about using it in banana bread sounds real good.

Are your mulberries fresh or dried? If they're fresh, I like them in pancakes like you'd normally use blueberries. I don't know what to do with dried mulberries though.

Mulberries make good jelly and wine, but they're hard to clean, so we wouldn't eat them in pies or stuff (they grow wild here, I keep chopping one out of my hedge every year). If they're pre-cleaned, then make pie! They're sweeter than black- or raspberries, so you don't need quite as much sugar.

I'd use the seeds for muffins (as well as the cacao powder - or maybe make Mexican hot chocolate out of it? It is milk (or half-n-half), cacao powder, brown sugar or honey (to taste), cinnamon, cumin, vanilla (all to taste). Keep it on a low heat for serving.

I've never heard of any recipes for Goji berries (though have seen them covered in dark chocolate locally, which sounds yummy).

Good luck!

Chia seeds are delicious; I eat them as they are so the flavour doesn't disappear. But I've heard you shouldn't eat too many at once.
