The end of "Monster Buddies" seems to indicate that they have some amount of sympathy for the corrupted gems and think there's some possibility that they'll get better (when Pearl reassures Steven that he might one day be able help the creatures in ways that no one else could). I don't think they call them "monsters" because they're cruel; I think it's probably just easier to fight them if they distance themselves from them and don't think of them as Gems, especially since they've been doing it for so long. It's also indicated that Rose's special healing powers are what gave her the possibility of helping the corrupted Gems (even though she was never entirely successful), so the other Gems might just not be able to help them and wouldn't have a choice but to fight. Plus, once they're defeated, their gems are sent to a chamber and it seems that they can be resurrected like the centipede was so at least they aren't destroyed.

Except Lapis was imprisoned in a mirror and used for their own devices. That's kind of sick.
