We're all just racist fucks. No, really. Wait, wait. What's that? We're actually not. Here's the thing: You'll never really know why people in general aren't writing/drawing specific characters. Trying to figure out why is futile. Assuming the worst will only make you miserable (and make you look like an asshole).

So, be disappointed about what you're not finding and then either encourage the creation of it (and hope people oblige) or, and this one can admittedly be difficult and less fullfilling when you just want it to exist for you to enjoy, make it yourself and hope it will stoke interest.

Sure, we're definitely not all racist fucks. But that doesn't mean that a community wide phenomena doesn't say something about the attitudes of that community.

Also, at this age non-white characters are still written either as stereotypes or they are just bland.
There're exceptions, sure, and sometimes people like bland white characters, but how many non-white characters are written is part of the issue.

It's a two-way relationship - maybe if more people gave a shit about non-white characters, instead of just focusing on the white ones, more non-white characters would be given bigger roles.
Anyway you look at it, it's a phenomenon that you just can't pretend isn't there.
