Do people honestly think MCU Clint and Coulson are more 'fascinating' characters than say, Nick Fury or Sam Wilson?

Nah, but they are more readily ship-able. Pre-Winter Soldier, there was a pretty big power differential between Fury and almost anyone else, and Sam doesn't have many pairing options if you're not a fan of Sam/Steve. Clint, though, has implied history with Natasha and banter with a few other characters, while Coulson is a main character in a show with about 30 episodes. There's more to work with now.

Coulson's popularity came from the first Avengers movie. Just sayin'

Clint/Coulson was already the second biggest ship in MCU fandom before Avengers came out. That pairing got popular from norsekink and inertia.
