I do. I'm no scientist, but the science classes I suffered through presented arguments that convinced me.

The religious thing is a non-issue. Catholics have been okay with evolution since the 50's. Personally, I've always figured that evolution was just how God formed everything to get it just how He wanted it. Why snap your divine fingers when you can watch everything grow and change?

I agree except that the people who are mostly driving the whole push for Creationism and Intelligent Design aren't Catholic, they're (Protestant) Christian fundamentalists and they are definitely NOT okay with evolution. So I'm afraid it's still very much a relevant issue, particularly in more socially conservative states.

I'm afraid I don't have any advice for you. The only thing I got is that you can point out that science isn't denying God exists, it's just figuring out how He set up the universe to work.
