See, I agree it can be overdone, but at the same time I like fic that doesn't gloss over that aspect of it. Because what you mean by "normal" sex is actually human sex, and I like it when fics acknowledge that Spock (Vulcans in general) don't necessarily approach intimacy the same way.

Kissing is lip-to-lip kissing for humans, and fingertip-to-fingertip for Vulcans. I like when fics make it a point for Kirk and Spock to both get something out of the encounter. Like, Kirk probably doesn't get anything out of touching his fingertips to Spock's, other than the knowledge that Spock does get something out of it (which is enough!).

The mind meld is supposed to be an intensely personal thing, so it's plausible to say Spock would want to use it during sex. (Using it as he often does on the show, to get information, etc, is actually a bit of a taboo, iirc. Kirk's a bad influence on him =P)

But it does get tiresome when every other fic out there decides they have some sacred bond, and somehow it's all described in exactly the same way and has the same effects and consequences. Fandom hivemind at its best/worst.
