Re: Favorite healthy meal?

Broccoli soup with tons of broccoli on a base of a couple of carrots, a green pepper, some celery, garlic, and onions, with Lima beans for protein and a potato for texture, all blended up when it's cooked with a ton of raw spinach so it's bright green. Then add good aged cheddar cheese and hot pepper, because I'm not good at totally healthy.

A salad with baby lettuce and spinach, slivered red bell pepper, finely shredded carrots and red cabbage, avocado, tomatoes, alfalfa and sunflower sprouts, sprinkled with raw cashews, shredded white cheddar, and tamari-roasted sunflower seeds, and served with dressing made of tahini, green onions, lemon juice and peel, and silken tofu.

Fruit. Really good ripe fruit. If you say it can't be a meal I will fight you. Or I would if I could move but I just ate half a pineapple, three pears, and a couple navel oranges and I might blow up.

Guess we'll have to fight, because if I eat that much fruit in one sitting, not only will I be still hungry but I'll probably get the shits. Also, diabetics aren't encouraged to eat THAT much fruit at once due to the carb content. That half pineapple alone is way more than the recommending serving for someone who is diabetic.

Just because something isn't a healthy meal for someone with a specific medical condition doesn't mean it's not a healthy meal...
