If Dumbledore was some kind of gay icon, maybe the erasure would be an issue, but since there's nothing in the canon about his sexuality besides the vaguest of hints that everyone missed so thoroughly that the author had to explain it after the series was finished . . . ship what you want, and don't feel bad.

But even if he was a gay icon, somebody shipping him with a woman in fandom would not erase him in canon in any way.
