I'm Jewish. Apart from what everyone's already pointed out about most modern Christmas carols being written by Jews, have you heard any Hannukah music, OP? It's...not great.

My mom's got Sirius radio in her car and every year near Hanukkah one of the channels turns to the Hanukkah channel. While a lot of the music is not so good, we have caught some pretty funny parody songs playing.

+1, fucking truth. TBH I go to services during High Holy Days mostly only because my synagogue's cantor is the most amazing amazer ever. The melodies consistently give me chills (also Ashamnu may or may not be my favorite and it's NOT just because of Jewish guilt, lmao). I tried out Hillel during high holy days once in college, and I was like "if this is high holy days, i'm not observing."

IDK, I once heard some medieval and baroque Hanukkah music performed by the Boston Camerata, including a setting of Maoz Tzur by Salomone Rossi, and that was gorgeous stuff.

I do love Maoz Tsur, but it kinda just draws more attention to how lousy the rest of the standard repertoire is by comparison.

Exactly. Cute. Imagine if the only Christmas carols most people - even Christians - knew were "Rudolph" and "Grandma Got Run Over by a Reindeer," and maybe it'll give some idea of where I'm coming from.
