You know what I view as "respecting canon" while shipping non-canon? Finding a way to break up or otherwise nullify the canon pairing without bashing the character you don't want.

Other than that, all I can say is ignore people who get in a tizzy and start yelling about "disrespecting canon" as I am sure there is a hell of a lot of crap that happens in fanfic that is plenty more "disrespectful" than shipping a non-canon couple.

Also, with your A/C vs. B/C, I know a common fandom triangle that makes me think of. A/B was badly written while the platonic B/C worked better.
