FB Reader uses a list view, and it shows covers as a small thumbnail next to the title. Free, no ads.

It doesn't have in-app organization, but you can sort by title, author, tag, recently opened, and a favorites list, and by file tree- so you can easily find them by fandom if you subfolder them. It also allows syncing between devices, if that's relevant.
