If the fandoms are smaller, or if there just isn't a lot for people to talk about beyond 'wow that latest episode was really an episode' then you won't see as much. Like, as a proportion of discussion to content something like The Elder Scrolls or Harry Potter will generate a lot more fan chat than Deadliest Catch. Some formats and genres lend themselves better to fandom chat.
The other thing is that people might be chatting about your fandoms somewhere you aren't seeing. idk if you follow any fans on tumblr, or they could be talking in facebook groups or privately on skype or some fandoms even still have IRC channels and such.
