People have summed it up pretty well here, I think.
Isayama tries very hard to make a Real Plot, it's just that it's his first real series so he's not as good as it could be. The first season of the anime is pretty solid, but atm the manga is going off the rails a little bit (remains to be seen whether it will completely crash and burn or not). Still, I find it refreshing that there's a series all about plot with no fanservice, and no fanservicey characters at all (well, I guess you could call Levi fanservice, but he's more in the mega-badass sense than the 'not wearing clothes' sense, haha).

The spoiler fear is real, in this one though. Spoilers really change the game.
I would say, don't take it too seriously (it's... Very Dramatic), watch a few episodes and see if you're having fun.
