Admittedly I haven't watched Glee since like, the start of S3, but wasn't the entire point of Beiste's character that she was upset that she wasn't taken seriously as a woman because she was into traditionally masculine things?

But then I know they're not above completely retconning tons of shit about their characters, so idk. It's probably just a desperate grab for any viewers at all for this last half-season.

Yeah, it was a pretty major part of her character. And now they're just kind of...shat on it. There was also no real lead-up or foreshadowing to the whole trans storyline.
