I badly want to go back to Japan; my wife and I went for our honeymoon and it wasn't nearly enough time to experience everything we wanted to. I'd also really like to go to Ireland, and Turkey's been on the list almost all my life.

We're both very much like you, we like to go where locals go. I guess you could say we're more into modern culture than history, though of course a splash or two of that is great. My family's definitely the "see all the monuments" type, so it's refreshing to travel with someone that likes to travel the same way I do.
