I'm not even sure where the story is going (no actual relashionship yet) but I started reading Stretch by Higashiyama Shou and I think it's cute.
It's slice of life about two roomates who do stretches to relax. It's half guide to stretching (a bit weird but interesting) and half developping relashionship between the two.
I'm not even sure it qualify as yuri yet, but... it's getting there? I think? maybe?
(I'm actually not sure who the target demographic is supposed to be, people who are a fan of scandilly clad girls touching each other and very slowly developing relashionships but also people who are really into the health benefits of stretching? idk)

Gunjo.

Its so atypical for the yuri genre (basically its a manga about a woman who manipulates a lesbian who is in love with her to kill her abusive husband, promising she will run away with her when she does even though she doesn't love her) and that is why I like it. I'm not a big fan of the "cute schoolgirls hold hands" thing in most yuri and this is the exact opposite of that.

Definitely Aoi Hana. I got into it while reading Hourou Musuko (same author), and it has a very steady and mature feel imo. Plus the anime was awesome, and my little sister got super invested and defensive of glasses girl (she was rolling her eyes when I told her to watch a yuri with me years ago. Jokes on her! She loved it!).

Also, Citrus is ridiculous but fun to read. It's about suddenly step sisters, so heads up on that.
