Re: Salad, f!s?
The recipe is for winter salads like lamb's lettuce, iceberg lettuce and radicchio but it tastes great with baby spinach and also chicory.
So you need the salad of your choice (recipe says roughly a pound but yeah, depends on how much you want?), some pine nuts (can be subsituted with chopped almonds - pistachios might be good as well, come to think of it) and a bunch of parsley. You also need dried dates - not too much or it'll get too sweet.
For the dressing you need 1 tangerine, 1 tablespoon of mustard (medium strength or fig mustard according to recipe but if you can find a mustard with 'arabian' spices, that's the best!), 2 tablespoons of maple syrup, 1 teaspoong instant espresso or powdered coffee, 6 tablespoons balsamic vinegar and 10 tablespoons olive oil. Ground pepper and salt.
Chop up the pitted dates and parsley, roast the nuts, throw it all together with the salads.
Juice the tangerine and mix the juice with the other dressing ingredients. Throw it all together. You can also add a few spices like cumin, cardamom or other "arabian" spices, but not too much because they can get really overpowering.
