I think the no punctuation inside the quotes bothers me a little more.

"This is an example sentence"

Also, haphazard capitalization - proper nouns should be capitalized. Yes, every time, not just when someone feels like it. And if you are starting a new sentence in dialogue, capitalize it.

Okay: "This is an example sentence," she said and paused, "which continues after the speaker and her actions are denoted."
Okay: "This is an example sentence," she said. "This is another example sentence."
Wrong: "This is an example sentence," she said. "this is another example sentence."
Wrong: "This is an example sentence," she said "this is another example sentence."

It really doesn't.

This:

“Okay, so this...” Pinkie indicated the candy in the center. “...is the stallion. And these...” She indicated the surrounding candies. “...are the mares who like the stallion."

is completely incorrect.

Um, did you read the thread? One poster said it was incorrect and corrected it, and then a second poster corrected the first poster, and then a third poster took the second poster's version and said "If I saw that construction in a book I would no longer be immersed in the story. I'd be digging for my St. Martin's Handbook and swearing at you when I learned you were correct." That's where the mess came in.

Both corrections to your mistake are still grammatically correct. The only difference between em-dashes and commas are the length of the pause, or the length you want to imply occurs.

You do realise that the poster you've quoted is still agreeing that is is correct though, right? They're unfamiliar with it and it's a construction that would jar them, but they do recognize there's nothing wrong with it.

I always thought that if you wrote the sentence like that one above, you'd replace the period with a comma because the dialogue continuing after the description is also part of the same sentence the character is saying. Like, I just always think of it as if the character is continuing a sentence, then no matter how it's broken up with descriptors of action and dialogue tags, it needs to continue afterwards as if it's still part of one sentence.

It is.

The core sentences in that line would be:

"Okay, so this is the stallion."

and

"And these are the mares who like the stallion."

The interruptions to those lines of dialogue belong as parts of each of those sentences, however you want to structure it (commas or dashes, not ellipses) and whatever kind of pause effect you're going for, so the periods at the end of the interruptions are incorrect.

It might be messy, but no, 'is' and 'are' don't get capitalized and neither does 'she'. I like this construction: “Okay, so this," Pinkie indicated the candy in the center, “is the stallion. And these," she indicated the surrounding candies, “are the mares who like the stallion." You could also go with this: “Okay, so this is the stallion," Pinkie said, indicating the candy in the center. “And these are the mares who like the stallion," she said, indicating the surrounding candies.

Protip: When you're being judgmental and critical of other people's grammar, it's not a great idea to post examples of your own when they're that horrendous.

But then that's usually the kind of person who complains the loudest about other people's grammar, so I'm hardly surprised.
