Re: Meals with no meat

Some people have mentioned beans and lentils already, and I'm going to second that. When I was eating less meat, I made a lot of bean and rice meals, or added beans to my salads and pasta to inject protein and make them more filling. I'd also make soups with beans, lentils, or barley, or a combination thereof. And if you're cool with using tofu, there's always vegetarian chili.

Chickpea salad sandwiches are pretty tasty. I'm also fond of cucumber, feta, and hummus sandwiches.

Um...crap. I know there were other things I ate, but I'm having trouble recalling at the moment.
