Meals with no meat
(Anonymous) 2015-04-12 08:09 pm (UTC)(link)What are some of your favorite meals that have no meat? Or what are some great sites/blogs that publish recipes. I'd love some meals that have refreshing fruit ingredients.
I live in bumfuck nowhere so I won't have access to weird/rare vegetable/fruits.

Fruit salads. I like strawberries, blueberries, and apricots.
Stir fries are easy, too, even if they take a lot of prep. Tofu is actually pretty good if you cook it properly, but you don't have to use it. Also very customizable.

(Anonymous) 2015-04-12 08:29 pm (UTC)(link)-Stir fry. Get some veggies in there! If you like tofu, I adore frying it with onions and sweet/hot chili sauce, then adding that to the stir fry. Eat it as is or on top of rice (I honestly prefer brown rice myself!)
-Fried rice. Similar how I make stir fry I guess lol. I usually put egg in my stir fry for protein, though, then add loads of veggies. With brown rice, lightly fried in a little soy sauce, and maybe drizzle a slightly sweeter or spicier sauce on top, it's delicious. Fried rice can also be really good with pineapple in it!
-Pizza. Okay, that's not remotely healthy, but either a nice margherita pizza, or a pizza with all the veggies in the world plus pineapple on top.
-Curries. If you're adventurous and like to make curry, do something with lentils, it's always good. I eat it with naan bread but again, probably not too healthy. Probably better to eat it on top of rice. But anyway, Indian curry is my favorite, probably because it is often vegetarian and still so insanely flavorful.
-I also occasionally make tamago-sushi. Make tamago-yaki (sweet Japanese omelette), then sushi rice (sticky rice, let it cool, add rice vinegar, salt and sugar) then roll it all in nori. Yumm.
-This is cheating, but I also like the "fake" meat options that are sold. Spicy black bean burgers are so delicious.

Seconding stir fry. You can stir fry damn near ANYTHING. Great if you need to clear your fridge of a ton of stuff.
One of Ro's favorites is couscous with vegetables and edamame. That's REALLY easy, takes like ten minutes and then ten more minutes to let it cool.
Eggs. I scramble them with vegetables (tomatoes, leafy greens, green onions) and cheese, or fry them sunny-side up and have them on toast. You can also make breakfast burritos with them!
Macaroni and cheese from the box can be made with edamame and veg without adding to the cook time you'd be using already. Bonus points if you ignore what the box tells you about adding milk or butter to the cheese powder and use yogurt and herbs and spices instead. It's GREAT.
Soup and stews for cold days. If you've got a slow-cooker, just throw a ton of lentils and vegetables in with some veggie bouillon or stock and forget about it for six to eight hours.
This cookbook has a lot of great recipes for folks on a strict budget, and a lot of good vegetarian ones.
Oh, and as for fruit: SMOOTHIES. Mash those suckers with milk, yogurt, juice, and LOVE IT. Also, chop them up and throw them in oatmeal, or yogurt. One of Ro's old favorites was plain yogurt with dried cranberries and chocolate flavor.

Chickpea salad sandwiches are pretty tasty. I'm also fond of cucumber, feta, and hummus sandwiches.

Stir-fry with tofu.
Rice and beans, Latin America style.
Pasta with yummy sauces and vegetables
Squash soup.
Stuffed squash with nuts and dried fruit.

(Anonymous) 2015-04-12 10:47 pm (UTC)(link)You might want to invest in some mushroom growing kits, to expand your repertoire a little, they are pretty cheap and will provide you with bulk mushrooms for little effort. And take an iron supplement. In fact schedule a regular vitamin check up with your family doctor every three months just to be safe.

Y'all want to remember that just because a meal doesn't have meat, doesn't mean it doesn't need protein. It does, or you'll get really sick, really fast.
Your good sources of complete vegetable proteins are tofu and quinoa, which you can add to just about anything. I personally love making quinoa salads with tons of vegetables and making an interesting dressing like thai peanut sauce. For tofu... sky's the limit. Stir fries, thai curries, Korean dishes like army base stew and mushroom/tofu mock bulgogi (personal fave), pad thai with tofu... I even like to use store bought smoked tofu in place of pepperoni on pizzas.
Stand by for my killer recipe on how to make tofu crumbles with the flavour and texture of ground beef.
Otherwise, you need to make complete proteins by combining starches and legumes/nuts. Chickpeas, lentils, black beans, kidney beans, split peas, peanuts, and almonds are some of my standbys. Pair one of them with corn, rice, or wheat.
Some examples of this would be Indian chick pea and cauliflower curry with basmati rice, hummus and flat bread, lentil soup and toast, black bean burritos, 3-bean chili with corn bread... you get the picture.

(Anonymous) 2015-04-13 02:25 am (UTC)(link)Root veggies take longer to cook than fresh tomatoes or green beans or summer squash, which take longer to cook than greens like spinach, so add the stuff that takes longest to cook first. Cut everything into pieces about the same size. Frozen veggies are cheap and often as good as fresh, since they're frozen very quickly after harvest, and are usually blanched so don't take long to cook. When your soup tastes and smells good, and is just about done, stir in some chopped greens like kale (takes a couple of minutes to soften up) or spinach (like 30 seconds) add some chopped fresh herbs if you've got 'em, maybe some grated cheese, and tuck in. It'll probably be better the next day, and soup is a great excuse to break out some crusty fresh bread and good butter, and maybe a big green salad.
If you're used to seasoning soups with bacon, experiment with liquid smoke and/or smoked paprika.

(Anonymous) 2015-04-13 02:40 am (UTC)(link)Mix all the veggies up in a bowl, add some salt or soy sauce and pepper or cayenne. Add a beaten egg, a little milk, and some flour, bread crumbs, or both. It shouldn't be runny or doughy, the batter is just to hold the veggies together. Plop heaping tablespoons of veggie batter into a greased/oiled hot skillet (mine's cast iron, I've never used non-stick, but I suppose if you do you can cut back on the oil) Flatten out with a spatula and cook a couple minutes til the edges look set, flip, and cook until other side is set and browning. Put finished pancakes on paper towels or brown paper to soak up any excess oil. They'll hold in a warm oven for a bit, while you make the rest. Serve with peanut sauce- but some people like them with ketchup.
