(Anonymous) 2015-04-13 02:40 am (UTC)(link)Mix all the veggies up in a bowl, add some salt or soy sauce and pepper or cayenne. Add a beaten egg, a little milk, and some flour, bread crumbs, or both. It shouldn't be runny or doughy, the batter is just to hold the veggies together. Plop heaping tablespoons of veggie batter into a greased/oiled hot skillet (mine's cast iron, I've never used non-stick, but I suppose if you do you can cut back on the oil) Flatten out with a spatula and cook a couple minutes til the edges look set, flip, and cook until other side is set and browning. Put finished pancakes on paper towels or brown paper to soak up any excess oil. They'll hold in a warm oven for a bit, while you make the rest. Serve with peanut sauce- but some people like them with ketchup.
