Dinner/sides recipe call

[personal profile] ginainthekingsroad 2015-04-17 11:42 pm (UTC)(link)
So I'll be visiting my sister's family this weekend/beginning of next week and we always cook for them. What should we make? Past dishes have been lasagne bologese, couple different vegetable soups, tacos, ravioli.

-feeds 5 adults and one not-quite 2 year old. She'll eat just about anything her parents do, I just mention that so as to fend off anything anything super exotic or like, extremely spicy. Like for example I wouldn't make my favorite company dish, Morroccan rice, because of all the small nuts but not because of the turmeric/cumin flavor, etc.

-main protein is poultry (chicken, ground turkey, etc.) or fish.

-vegetables are a plus, and I'm not opposed to vegetarian recipes.

-also please vegetable sides! Perhaps some kind of dish we could make as a side, then finish for lunch the next day.

Vegetarian chilli can make a good side? Switch out meat in recipes with beans and corn. Keeps well too.

Maybe a chicken risotto?

But two years old is the best time to be introducing varied foods to a child's diet. If they grow up eating it they're going to be less likely to turn their noses up at it later. :/

Make a pot pie, and serve it with a salad.

OR! My favorite thing ever- make fondue. If you have a slow cooker it's the easiest thing and super fun. Just get a couple of good cheeses (Jarlsberg, Monterey Jack, Gouda, Gruyere all work well) and grate them into a bowl. Toss with a few teaspoons of flour.

Then, add some white wine to the slow cooker and heat it up until simmering to remove most of the alcohol. Grind in some black pepper and add a chopped clove of garlic while this is happening. When it's been simmering for 5 minutes, add your cheese/flour mixture and turn the heat to the lowest setting.

When it is melted, you have cheese fondue.

You can cut up roast chicken, crusty bread, blanched broccoli or cauliflower, different types of sausage, apple slices, olives, raw cherry tomatoes... Anything you like to dip into it.

Fondue sounds like an awesome idea, tbh. It's like grownups playing with their food!

Yesss. And you can have a whole bunch of different little things to dip in it and however many vegetables you want and really who doesn't love a whole bunch of different little things to eat?

Well yeah, she eats all sorts of great adventurous things. The reason I gave for my example is that small nuts are still a choking hazard, not flavor reasons. And there's a difference between a 2 year old that eats a vegetable stew with strong Middle Eastern spices and like vindaloo curry. As I said, "extremely spicy" (which is also a valid concern on my mother's behalf as well).

We could make fondue at my house, but probably not at my sister's. They don't have a basic 6 quart sauce pot, let alone a slow cooker. I am constantly frustrated by the things their kitchen lacks, but I know if I get them things for it 90% of the time they won't use them. :\\\\\\\\

Enchiladas? You can totally make chicken enchiladas, with shredded chicken and black beans, or just black beans if you want to go the vegetarian route. I make mine with shredded chicken, taco seasoning, salsa, and cream cheese, all cooked together and then rolled up in a tortilla and baked with enchilada sauce and cheddar cheese on top. Yum. Serve with rice and beans, or some other rice dish.

Super easy vegetable side: green beans with cranberries and almonds. There are many recipes for it, and I've never taken it to a potluck that didn't immediately devour it. It's a fan favorite. :)

I've picked up a couple recipes from Emeril that might be useful for sides.

Ratatouille (can be made vegetarian): http://emerils.com/122733/ratatouille
