Whyyy is there such an obsession in fandoms these days with whose ship is "healthier"?

Because unhealthy ships = problematic, so it's a race to designate your ship as healthiest of them all so that it can be least problematic and you can feel assured in the righteousness of your shipping preferences. If that's not possible, then you have to designate one or more ships as being the unhealthiest so that at least you're not the most problematic one around.

- Because fen aren't happy unless they're clutching their pearls over someone else's preferences.

- Because social justice warring has become so mainstream that you must be downright puritanical in everything if you want to conform.

- Because people are incapable of understanding the concept of a fantasy.
