Rice pudding cooked on the stovetop, with cinnamon sprinkled on top.

Put 1 quart of whole milk and 1/2 cup of rice in a saucepan and bring to a very slow simmer; cover and cook 35 to 45 minutes, until the rice is done. (Note: it has to be whole milk; this recipe does NOT work with skim or low fat milk! We tried it!) While rice cooks, beat 2 eggs; then add 1/3 cup of sugar, a little at a time, beating after each addition; blend in 1 tsp of vanilla. (Or more, to taste.) When rice is done, turn off heat and stir the egg mixture into the rice and milk. Let it stand until thick, then pour into dishes and sprinkle with cinnamon.
