Cheap, delicious foods

(Anonymous) 2015-05-28 02:08 am (UTC)(link)
What are some you like?

Pepperoni, ketchup (with maybe a sprinkling of seasonings), and some cheese on a tortilla and microwaved until it's hot and melty.

I call it the pizzarito, and it's great. And if have spaghetti sauce, I'll use it instead, but I'm far more likely to have ketchup packets lying around.

Beans! Beans, beans, beans, beans, beans, beans, beans.

Also, pasta, and also liverwurst and other organ meats.

Corn on the cob! Break an ear in two, put it in water, boil till done. Yumyumyum and you can get ears at like 25 cents a piece.

I wish I could still eat corn on the regular. Fucking blood sugar.

My mom always put some sugar in the water to make the corn sweeter. Then salt and butter it for eating - yum!

You can also cook corn in the microwave. Peel off most of the husks, leaving just one layer of them around the ear along with the silk; then microwave the whole ear for about 2 minutes. Pull off the last husks and the silk (which comes off easily under running water), and enjoy, with butter or without. (As far as I'm concerned, putting anything on good fresh sweet corn is gilding the lily.)

Also, sweet corn is rich in fiber and has about the same number of calories as an apple, but with far less sugar.

Man, I just got a a weird craving for Ramen. I only use 1/3 to 1/2 a seasoning packet, though.

Scrambled eggs! Made with real butter. You don't need much, just a tablespoon or so.

Quesadillas. I make my own pizza and it's better and cheaper than delivery. Spaghetti sauce, also from scratch. Basically, learn how to cook and you'll be able to eat better and less expensively overall.

ramen

make it yourself, then it can be really healthy and still good! A good chicken boullion and some additive-free soy sauce is all you need for basics, and you can put anything you like on top. Add some miso for the soup if you like it, it adds a whole lot of flavor.

btw. I'm a really poor student, so it's not that I just use super expensive gourmet ingredients. actually, making them myself is less expensive than buying a better variety of instant, since I use staples like organic chicken stock(2-3€) and miso (3-6€ keeps forever in the fridge, enough to make about 150 bowls of miso soup), cabbage and dry wakame (4€ also keeps forever and expands so much I usually only need to buy one pack/year). Really, the plain asian noodles are the most expensive part at roughly 0.40€/serving)

How do you avoid the miso sandy-ness in the soup? I bought miso at the Asian supermarket for the first time and I love the flavour, but I hate the grit at the bottom of the soup! Is there something I'm doing wrong? How do you make it dissolve completely?

nayrt - There really shouldn't be much "grit". You may either want to switch up brands, or make sure that you're using water that's hot enough (and that you're stirring thoroughly enough) to dissolve all the miso.

Miso comes in different varieties. some people like the leftover crunch. it depends on what beans are used and how they are prepared.
YOu should maybe switch to a fine white miso.

plus, the trick to dissolve it is to first make a paste with only a little water (in a different bowl or the soup ladle) and then dissolve the paste.

I don't think that makes it any better for you? It's still just ramen (a big mass of starch completely empty of any other nutritive value) + some flavor.

I mean I guess if you forgo the flavor packet that comes with the stuff you might avoid a lot of the sodium but some of the stuff you're adding probably has sodium. Maybe not as much?

Also, it's interesting that your ramen costs so much. That's more than twice what a packet of ramen costs for me ($0.20).

Re: Cheap, delicious foods

(Anonymous) 2015-05-30 09:02 am (UTC)(link)
You in europe? because I am (germany) and all ramen here is imported, subject to tolls, plus consumer tax is high, too.

concerning the nutritive value... well, it's no better or worse than spaghetti or white bread for that matter. Flavor needs something plain to work on. But a decent chicken stock can be pretty healthy, if you use more substance and less flavor enhancing additives. and by adding stuff like vegetables you can make it just as healthy as any noodle dish.

anyway, nothing is ever bad for you unless you eat it in an unbalanced way. lots of sodium in one food can be totally OK as long as the other stuff you eat contains less. You could also use salt-reduced soy sauce or make shio-ramen with potassium chloride instead of sodium chloride, if you're concerned about that.
Frankly, I know from experience that the japanese diet is traditionally salty, and still they are amongst the more healthy nations, so I usually don't try and alter the recipes I use to make them "healthier".

No, I'm in the US.

...I never claimed ramen was worse for you than spaghetti or white bread. All that shit is just empty carbs. Ramen is cheaper though, at least where I live.

A baked potato with scrambled eggs spooned over top.

Rice pudding cooked on the stovetop, with cinnamon sprinkled on top.

What's your recipe for rice pudding, anon?

Re: Cheap, delicious foods

(Anonymous) 2015-05-28 10:50 am (UTC)(link)
Put 1 quart of whole milk and 1/2 cup of rice in a saucepan and bring to a very slow simmer; cover and cook 35 to 45 minutes, until the rice is done. (Note: it has to be whole milk; this recipe does NOT work with skim or low fat milk! We tried it!) While rice cooks, beat 2 eggs; then add 1/3 cup of sugar, a little at a time, beating after each addition; blend in 1 tsp of vanilla. (Or more, to taste.) When rice is done, turn off heat and stir the egg mixture into the rice and milk. Let it stand until thick, then pour into dishes and sprinkle with cinnamon.
