1) Hagrid said that. Hagrid is biased. He also said Hufflepuff is 'a bunch of dudders'.
2) Wizarding Kids get a rudimentary education (reading/writing/math/etc.) before going to Hogwarts. Anyway, Hogwarts covers more than just healing and defense against the dark arts when it comes to courses that could be applied to jobs?
3) Do you think people who aren't on the quidditch team don't play quidditch? In any case, there are other wizarding sports (quodpot for one). Quidditch is just the only one we see focused on. At a school of less than four hundred people, it's not surprising that they don't have much in the way of school sanctioned sports.
4) Inbreeding. This is pretty explicitly pointed out in the books. Most purebred wizards (that have lived in the country for a long time at least) are related at some level.
